I have some kinfolk down aroung Alexandra La. They bust every poole do that comes by. The carcass goes into gumbo and the big ole gizzard goes into the frying pan.
My father nd I went down there to visit and hunt ducks. Completely different world in those swamps. First time I ever saw boiled coffee too. My aunt use 3 parts coffee and 1 part chicory. If you could drink the coffee you could certainly eat the food.

lots of folks eat gizzards down in south LA...pretty tastey too. Redheads have some big gizzards...like baseballs.

dos gris, only thing about gizzards is cleaning them suckers. A lot a work for a little treat. I will clean mine and boil with the whole bird while making gumbo. But it's hard to beat some good fried gizzards. Best place to get chicken gizzards around Jackson is the Amoco on Rice Rd or at the Country Kitchen(???) over behind Crossgates in Brandon. This info is for those that aint never tried some good chicken gizzards. Oh yea dont forget the hot sauce, got a have hot sauce. baldduck

I do know people who eat gizzards. I personally don't know how to cook them or marinade them. I wouldn't be opposed to the idea. It's mostly muscle--- of course so is beef tounge and I didn't particularly enjoy that.

Like the duckman said the lower you go down the duck chain the more garlic you have to use. It takes a lot of garlic to make a merganser or shoveler taste ok.

Folks oughta have to eat what they kill....'d be a good way to learn to identify what you're shootin' at [img]images/smiles/icon_eek.gif[/img].....you'll figure-out pretty quick, what to shoot at and what to let go. That's called 'restraint'.

That said....I don't like to use the term, 'trash duck'........there are just some that are more tasty than others. [img]images/smiles/icon_biggrin.gif[/img]

interesting thread boys, I love them teal and early one up here will pass on mallards to shoot a limit. I usuall roast them till they fall off the bone and eat till I'm almost sick. The thing is Ive never grilled any and am wondering how you guys do it. Help out a dumb canunk will ya? [img]images/smiles/icon_biggrin.gif[/img]

cut 2 lil tasty fillets off of bird, throw in italian dressing why you shower and unhook boat. A lil bacon wrap aint bad, but isnt mandatory. Throw it on your george foreman grill, and you eating 6 minutes or so later....They never make it to the freezer at my house. travis

Oooohh, wicket my boy. You just put them little rockets in water for about a day and let 'em sit. Then take them out and put in marinade of dale's seasoning, tabasco, and maybe a lil' lemon pepper for about 8 hours. Then I turn the grill on low(gas), only light one burner, put the tealies on the top rack and opposite side from lit burner, sprinkle on a little Southern Flavor from Selma and let sit for about 45 minutes. Then ENJOY!

Fillet the breast and soak in Dales seasoning sauce for 8 hours in refrigerator. Wrap around a pepperoncini or jalapeno.Wrap again with bacon. Use tooth picks to hold together. Get your grill hot and then turn down low on one burner. Put the delicacies opposite of the on burner. About 6 to 8 minutes the feast will be on!

This Dales seasoning must be good if two guys in a row mention it. Let me know if somebody would mail some up to me and I will cover the cost of it and throw in a duck band for your trouble.
