Marinate your game with everything in your seasoning cabinet, plus lea and perrins, teriyaki, allegro wild game, lemon, garlic and herb vinegarette, overnight and cook the following night.

marinate it for 5...yes I said 5 days then grill it. You can also cut some slices in it to allow the marinate to get in deeper.
It's better to have it and not need it, than need it and not have it.

Soak it in salt water or milk overnight. The salt water will draw the blood out of the meat. The milk just seems to dull the gamey taste a little bit. I have used both and the milk seemed to work the best. I usually don't use anything unless I'm cooking for other people. I enjoy the game taste... if I didn't I'd start hunting cows.

I don't really mind the wild flavor that most ducks and deer have, but I do marinate ducks in orange juice, soy sauce, and hot sauce when I'm gonna smoke them. Gives them a great flavor.

I have read many times that some people soak their game in salt water or milk to drain the blood and remove the wild taste.

We always soak it in salt water for a day or so and then marinate it with whatever you like. Buttermilk also works as well

a warm salt water bath after dressing the game will help extract some of the remaining blood...this can also be accomplished by hanging birds overnight before cleaning

in your marinade use some red wine vinegar or citrus or both

duvs I like a bit of red wine vinegar and pineapple

ducks I use red wine vinegar and oranges

...and they wrote it all down as the progress of man.

This holds true, let soak for a day in fridge in salt water, then dress'em up with what ever you flavor is. Don't grill to long.
