I'm with dutchdog. 5 days in the fridge in water{change water each day} if the temps co-operate i leave them hanging, feathers on, for a few days..

The trick is to get as much of the blood out as possible. lightly salted water draws it out best. The more changes, and the smaller the pieces of meat, the more blood you get out.

I use milk for about 12 hours. I find that in water the meat gets soft, but that is just me. Water sure seems to work good for alot, just not me.--Ace
