any of you fellas got a good recipe you'd care to share...don't ask me why, but today i just got a hankering for em and i aim to eat em tonight...gator

For a quick fix, I use that Mahattma's (spelling) red beans and rice mix and then cut up some pre cooked sausage links to go in at the same time. It ain't Mom's home done recipe, but, it works in a fix.

that's odd. I been craving red beans and rice today too. Bout an hour ago I went and got the stuff to fix it tonight

Hey gator, Sherry cooked up a big Duck Gumbo the otherday that was awsome. I don't have a red beans and rice recipe but I can pm you a damn good duck gumbo recipe. You have to use Arkansas mallards though. Not smilin mallards, Arkansas mallards :lol: If you want the recipe I would be glad to PM it to you.

don miller, i would gladly take the recipe, and i got a few mallards that would make it taste purdy well...killed around the southern part of the flyway...prolly some you missed, hehehe...mr. ramsey, anat says you da man for red beans and rice, i fixed some tonight that turned out pretty well but would love your input...thanks, gator

Get you some Camiel red beans and soak them over night in some cool water. That will softeen them up for the next night. Then the next night put you a little oil in a pot and brown you a trinity(onion, celery, & Bell pepper). Cook it untill the oinion are clear. Then just use the water you covered the beans the night before. Add the trinity and cook untill you can mush a bean against the side of the pot. Then add some Savioes Cajun sauage. Any other kind and you anit cook'in south Louisiana Style. After that I would season to taste with salt, pepper, & Louisiana hot sause from evangline ( NOT TABASCO). Other ingrediants that I will only disclose in a PM, so send me one if you want this to work. After you get them right mush the beans against the side to make them creamy. Then cook you a pot of rice. I perfer the Mahatma's parboiled rice, becasue it don't stick. I do not add deer sauage to my read beans, it just don't seem right. I save me deer sauage and DUCK sauage for the gumbo at the end of the summer. This is when I cook all that is left in the freezer before next year. The purpose of a good gumbo is to use up what you have left before hunting season is here! A good gumbo is another post for another time! I don't weigh three hundred pounds because I like water you know!

Red Beans & Rice Recipe

STUMPY'S RED BEANS & RICE

Use a large Crock pot.
1# of smoked sausage, sliced
1# Polska Kielbasa, sliced
2- onions diced or chopped
2- cans chooped green chilies (a must for flavor)
1- bell pepper chopped
2- 12oz cans Black beans (slightly drained)
2- 12 oz cans Pinto beans (slightly drained)
2- 12 oz cans Red beans (slightly drained)
3-4 Tbls of Frank's Hot Sauce (more if you like it HOT)
2 tsp Garlic salt

Place all contents into Crock-pot in layers. Add water to 1/2" from rim of pot (usually 1-1 1/2 cups). Allow to cook overnight or at least 4-6 hours. Serve over rice. If your on Sugarbusters diet, use Brown rice.
