Re: Jackson, MS Deer processing

I switched from the Buckshop to Dwight's, mostly because Dwight's is a more convenient location for me. However, I have never been satisfied with the Buckshop sausage. I imagine Dwight's and S&D's sausage recipe is pretty much the same. And there is no telling whose gut shot/hair in the meat deer you are going to get back at Van's.Odis wrote:............so is the sausage from S&D outside of Learned, I use the Buck Shop for everything but sausage
Re: Jackson, MS Deer processing
I ended up going with the Buck Shop off 49. Only because my wife and I just bought a house out that way and it was convenient. We'll see. I'll report back.

Vans has changed.......the moore brothers Shane and Sam run a top notch operation back there, I grew up with them and have gone and watched them work. You get your meat back. They have perfected the sausage and its the best I have ever had hands down.
I too once refused to use vans and encouraged everyone to do the same.............but its different now

I got the green onion and cheese from van's last year. It's beyond greasy. Usually cook it for football parties and such b/c drunk people don't seem to notice how greasy it is.

B & L, across from the hospital and V'burg, just picked up some og my business too, because theyre convenient for Sunday night deer or hog kills and cheap.
Everyone in town uses the same cajun tamale guy down in Lousiana, no telling who deer meat your getting, or if it's even deer, but it's fine regardless.

How do they do on hogs and what do you have made up? I've used them in the past, but not for a hog. Their snack sticks are FINE. Sausage, not so much...Double R 2 wrote:Agreed and same here, the Moores do a fine job.DUCKAHOLIC wrote:Vans has changed.......the moore brothers Shane and Sam run a top notch operation back there, I grew up with them and have gone and watched them work. +1 Stacy Martin does a fine job and you get your meat back every time. He is off of Martin Road. It takes about 5-7 minutes to get to his place from the Bolton exit at I-20. From Jackson, take I-20 West toward Vicksburg. Take the Bolton exit and go to the right. The road forks about 200 yards up. The road on the left is Williams Lake and the road to the right is Bolton-Brownsville. You stay to the left on Williams Lake until it dead ends on Highway 22. Take a left on Highway 22 and go to the first road on your right. Take that right on to John Warren. Go to the second road on your left, that is Martin Road. Take that left on Martin, go short distance and you will see the signs to his place.
He is also making boudin this year. Dang good. Our camp takes most of the deer we kill over there.
