Ducks

Has anyone ever marinated there ducks in beef broth to get the game out of it? Ever heard of this?

I am interested in purchasing duck calls that were made by Mike McLemore. I am a family member and they have a sentimental value.

Personally, I like the taste of wild game.......because it tastes like wild game.......not beef....not chicken......not nutria.

I agree Randy......if you want the "wild game" taste out, stick with chicken.

I did a round of gumbo recently and used my uncle's recipe. Basically simmered the breast, bone and meat, for a couple of hours with veggies and some seasoning. The meat fell off the bone plus I strained the pot and used the "duck stock" for my liquid in the gumbo it was legit. I'll have to post it up in the recipe thread.

I soak mine in Beer for 24 Hours. I knocks Most of the blood out of the meat and makes it taste great.

Soak mine in water for 2-3 days and change the water once a day then bag em up or cook em. Taste like duck!!!!

Salt water tenderizes them but also keeps some of the wild taste.
