This happened in my old tahoe, replaced the cat converters and it helped but only a little

Yep, replace the rest of the coil packs

My father-in-law just went through the exact same thing.

The short......short version!
missing/running like shat......so Ford says coil pack(done)
better for a week but still not quite right......so Ford says replace plugs(done)
truck sputters at stop lights and reeks of gas inside the cab.......Ford says tune the programming(done)
no change.......Ford says dyno and then wipe the computer and flash with new program(done)
no change/still loading too much fuel..Ford Special Customer agent blah blah says "Oh yeah, I've seen this before..blah blah..motor oil sending unit..blah.not getting oil..blah..Change oil to blah(done)
no change......Ford says "Oh well we can try a new motor".....we'll pay for it if that doesn't fix it(done)
starts running right.........F-In-L says "Thank you sir may I have another!"
truck starts dieing.....Oh ok, bad altinator(done)
4 altinators and 1 battery later.......Truck sold and Chevy bought!
end of story...

If the gas smell came after the plugs were changed then the torque #'s or seating of the plugs weren't correct and you were getting blow by. Mine did the same and I re torqued them... no more gas smell.
