I grind my own. Usually grind it lean for spaghetti and chili. I hit up the butcher counters at various grocery stores for beef fat to grind in for making burger meat. Some will charge you for it some won't.

WOW!!! I would be pissed if I had waited that long. I work at a processing place here in Louisville. We were done the week after season. and tried to keep less than a 10 day turnaround all year. During heavy killing that meant no hunting and long days.

The crazy thing to is they are closed on Thursdays and Sundays.

If I take one to my guy its usually done within 7-10 days. I don't have smoked sausage made but anything over a month is ridiculous.

Folks I use is 7-10 days and it's pretty good. I asked how many they process in a year and they said over 1,000. Less than 100 bucks for whatever I have done and they will even skin it. It's right by my camp and is sure convenient on nights I don't want to fool with it to just ride up straight from the woods, drop it off, and be on my way. Shot one Christmas Eve and didn't have time.

Went by there on my way home from a turkey hunt this morning and he said that everything was finished. If y'all are waiting on sportsman's just go by there and pick it up.

I dropped 2 hind quarters off on jan 7 called them around middle of feb and they said they were still working on it and they would call when it was ready. Finally got a call on march 15 saying it was ready for pickup, I couldnt go by so I got a co worker to stop by and pick it up for me. All I was getting was 2 roast and the rest in cajun sausage, it is by far the worst looking sausage I have ever gotten anywhere. The sausage was pale white looking in color and didnt even look like it had been smoked, meat was mushy and looked to be 90% fat. I put some on the grill just to see and it just dripped grease and flamed up the whole time. My wife wouldn't even let me bring it in the house because of the smell so I just chunked it in the garbage. The 2 roast I got were about the size of a big hamburger patty and looked to be some other cut of meat but not a large roast muscle. I have been calling for 2 weeks to tell them how unsatisfied I was and wanting my money back but they want answer phone or return messages,I have learned my lesson and will not go back to Sportsmans again.

I have to agree with everyone about sportsmans proc. I have tried to support the guy since he is local. However, his customer service has gotten worse each year. I dropped off my deer in early nov. , and I finally got it back at the end of jan. I had to make several calls, and one of the democrats got really smart one time. I let chris, who is the owner, know he is doing a great job of running off customers. I think I will try the guys in pocahontas next year. There are way to many options around jackson to have to put up with poor customer service.

+1 Buck Shop in Pochahontas does a good job

I think I am spoiled this year it took me almost 2 weeks to get mine back from a new guy that someone recommended and that’s twice as long as normal. The places I have used in the past usually have it back to me a couple of days but never over a week.

I gotta say that I have had no problem with the meat I got 3 months after drop off. It is actually quite good. But the customer service and wait got me. I was told a different story every time I called. I actually have a friend that has still not been contacted and nobody answers the phone there and he isn't going to make the drive unless he knows it is ready. I will try elsewhere next year. Maybe this year will open his eyes and he will either get more staff or take less deer.
