As tall as that ole boy is, you could make a fire box in the bottom, and have a water pot above that. Still have plenty of room for meat. Just need to put 3 doors on it, small one( size of the fire box) to add the wood and charcoal in, another small ( large enough to take the water pot out)one for the water, and then a large one for all the meat. probably could use some stainless steel doesnt have to be very thick since all the heat will be going up anyway. Just thick enough so it wont wear out anytime soon. Slap a thermostat in it and there you go.
