How new of a truck are you wanting? The 6.4L Ford is doing great with people taking the DPF off the exhaust system and getting 21+ mpg highway, this is the engine that came out in 2008. The DPF is the diesel particulate filter and was the initial cause of the 6.4L engine throwing flames out the exhaust tailpipe. The duramax is still a great truck and Chevy is the only one that hasn't changed engines in a few years (like Ford was with the 7.3L). Dodge, I still rather the 5.9L 6BT over the newer engine.

I had a 06' f-250 with the 6.0 (junk). Now I have a 09 GMC with a duramax and allision. The GMC will walk the dog around the ford i had. The ride quality is way better than the Ford. I can get on average on the highway about 17-18 MPG. I have not done anything to the truck. I am not goin to either because the mileage and power is plenty for me. I want to keep the reliabilty.

Speaking only for Ford: It's said a full tank would last approx 10k to 15k miles and the capacity of it is 6 gallons.

What happens when you run out of urea? Does the motor shut down like it does when it runs out of fuel or does the fuel mileage drop???

The engine goes into a limp mode and will run until it's shutoff. If the tank isn't refilled, the truck won't re-start. Now, there is plenty of warnings before that limp mode would take effect. It would mean the driver isn't following the warning signals and it would more or less be operator error.
