What's the difference in the oz. shot, actual pellet count or powder. The lower the oz. the faster the velocity but my buddies shoot nothing less then 3" 1 3/8.

FPS velocity is not all it's made out to be. Sure, in some instances, more velocity does help in steel at longer distances. But saying that I shoot the slowest FPS 3.5" shells made and kill ducks at longer distances when necessary. However, steel is lighter than lead, thus giving you more pellets in a load. I shoot max payload that a shell will hold unless I just can't find any.
2 3/4" = 1 1/4 oz load
3" = 1 3/8 oz load
3 1/2" = 1 9/16 oz load
The steel companies are pushing the higher velocity shells because they can charge reg price, sometimes higher, with less materials involved, equaling more profit. I have been buying some 2 3/4" 1 1/8 oz shells, but only because they were $60/case.
I see no reason having a 3.5 gun, shooting 3.5" shells with a 2 3/4" load of 1 1/4 oz of shot. It defeats the purpose of having magnum guns.

I have been shooting Kent Fasteel for about three years now, and I would recommend them. However, like others said, pattern your gun to decide the right shot size. I shoot 3" #1 1 1/8 oz. with a improved modified factory choke out of my SBE. It's very effective at decoying duck or even passing shots.

use #3 high-velocity.....if you ask me, as long as it's not expert, it's all about what choke you have. Briley goose-getter is shooting a basketball at 50-60!!!
