Google Kratky method. Have a friend using it for vegetables and has some great success.

Hydroponic works very well. The only catch is that you MUST oxygenate the water (simple fish tank air pump is all that is needed) for the plants to survive. You can go a step further and do aquaponics which is have a fish tank with plants on top. The plants filter and clean the water and you eat the fish. People use Perlite as the "dirt" or planting media. I was going to build one a while back, but hadn't done it yet.

Take a piece of 4" or 6" PVC pipe and make a U shape. Have a small aquarium at the end with a water pump to circulate the water. Put an air pump in to oxygentate the water. The only downside is that it uses electricity for the water and air pumps. You could go DC and use solar to charge a bank of batteries.

Had a buddy in college used some totes, bout 35 gallons or so, filled bout 3/4 with water used some chicken wire stuff and some of those long floats used for jugs and made a "platform" that floated in the tanks. planted the "vegetables" on the float, had an aerator to circulate the water a little and the lights on timers. He could leave for a few weeks a the time and come back, the the water had not all evaporated but needed to be refilled, but as the water was slowly evaporated/was, used the platofrm would sink down lower into the totes at the same time the vegetables were getting taller....it actually worked extremely well.
