Good Chili recipes

Anyone got any good chili recipes? I'm wanting to make up a good batch and want some good ideas. If you have them, give good details so us illiterate people don't have to think too much.

My Grandmother has a great one.. I just can't seem to get the same results she gets. Here reciepie calls for a pinch of this, a smidgion of that. And a fistfull of that over there.

So i just go with the store bought mix..

2 lbs hamburger or deer meat
1 1/2 medium onions diced
12 dark beer
1 can 28oz whole tomatoes
1 1/2 cans kidbey beans. drained
40 oz tomato sauce
1 package williams chili mix
3/4 T salt
3/4 T pepper
1 T garlic salt
2 fresh jalap. peppers diced
Brown meat and drain. Put it in a big pot with the rest of the ingredients and simmer for 3 hours. i normally double this so i can freeze in dinner portions.

I am looking for an old reciepe that someone posted on here several years ago, that had hamburger, different types of beans, bellpeppers, onions, brown sugar , and someother stuff. Some one on this board posted up the reciepe and I have lost it. Any help ????

This is an easy recipe that can be cooked on an oven pot, or a crock-pot (which sounds like it might be what you need)
4 lbs. venison bacon burger (ground beef)
2 medium onions, chopped
1 can red kidney beans
1 can pinto beans
1 green bell pepper, chopped
2 garlic cloves, minced
1 large jalepeno, chopped
6 tablespoons extra virgin olive oil divided
8 tablespoons chile powder
1 tablespoon ground cumin
2 teaspoons garlic salt
1 teaspoon oregano
3-4 good shakes, tabasco
2 cans beer
2-3 cans, chopped tomatoe (3-4 tomatoes, chopped)
12 ounce can tomatoe sauce
6 ounce can, tomatoe paste
4 ounces green chiles, diced
1. Saute onions, green pepper, garlic, and jalepeno in 2 T oil until onions are clear, on medium high heat, set aside.
2. Brown venison (beef) in 4 T. oil, and combine with vegetables in large pot.
3. Add the rest
4. Cover pot and simmer for 3-4 hours, stir often.
**This is definitely some kick a** chile. **

GILREATH,
I noticed you didn't put any beans in your recipe. Was that accidental? Or do you make yours without beans?

sorry, that was my mistake...i do include them, but that is the less-gas variety(either way produces a really good chile).
i edited it to include the beans, in my post above.

all of this is off of memory...... so do all your seasonings to taste....
but....
about 2 cups of diced celery, 1 large diced bell pepper (green), 1 medium diced onion
1 14.5 oz can each of pinto beans, kidney beans, and chili beans (drained and rinsed)
1 28 oz can of whole tomatoes (stemmed and peeled) leave the juices, this is where your moisture comes from
2 28 oz can diced tomatoes, same as the whole tomatoes, leave the juice
1 packet of chili seasoning
a palm full (a little over a table spoon) of ground cumin (this is the "flavor" in chili)
and then chili powder to taste....... (start with about a 1/2 teaspoon)
1 pound ground chuck
1 pound ground sausage....
to make,
brown the chuck and sausage, drain and set aside
spray a medium-large sized dutch oven with cooking spray and bring to medium heat, add your onions, peppers, and celery and briefly saute' (about 5 minutes)... slowly stir in the tomatoes (all of them).... then add the cumin and chili powder, and let cook for 8-10 minutes to let the veggies cook down, last add the beans, browned meat, and chili seasoning and let simmer for about 4 hours.... it'll make you slap your momma, a few msduckers have had it, chevy01234 claimed 'chili sickness' and an inability to eat chili....... the people sitting next to me in class the next day LOVED me.....

Okay - lost the electronic copy of my recipe but have made it enuff to cook it in my sleep. My wife developed a head cold last week-end & wanted me to fix it to "open her up" HA - I said baby, (that's what I call her when I want to go to the camp for the week-end) it's friggin' 80° out & you want me to make chili - nope - aint gonna happen! So it's fresh on my mind since I just made it - haha.
Deer Chili by eSJay:
2 lbs of ground deer meat (Can substitute with store bought ground beef)
1 can of Rotel "Original"
1 - 16 oz can of Tomato Sauce
1 can of Red Kidney Beans
1 can of Chili Beans
1 can of Black (Negros) Beans
1 Bell Pepper (Chopped)
1 Onion (Chopped)
3 cloves of fresh Garlic (Minced)
1 TSP of Chili Powder
1 tsp of Oregano
1/4 tsp of Cumin
Worcestershire Sauce
Black Pepper
Salt
____________________________________________________________
Brown ground meat in skillet, then drain. Add Worcestershire,
Black Pepper & Salt to taste then transfer to large dutch oven pan.
Sauté Bell Pepper, Onion & Garlic in vegetable oil then add to pan.
Drain juice from cans of beans. Add Beans, Rotel, Chili Powder, Oregano, and Cumin to pan.
Bring to a boil, then reduce heat to low & cover. Must stir occasionally to prevent sticking. Cook for 45 minutes. To create thicker texture, mix in 1/4 cup of corn meal & simmer for an additional 15 minutes.

This recipe produces a "Mild" Chili. If "Hot" is desired:
Add 1 or 2 chopped Jalapeño Peppers to the Sauté.
Use Hot Rotel in place of Original.
Use Ranch Style Beans with Jalapeños
Bump up the Cumin to 1 tsp.
Bump up the Chili Powder to 2 TSP.
Add a little pepper sauce or Tabasco Sauce.
Hard to stop at one bowl!
Also; gotta have some Saltines!

I don't know if you will think this is good but I have to make this every year at our Haloween party.
2lbs ground sirloin
1lb sausage (patty tube kind)
1 onion
1 can kidney beans
1 can pinto beans
1 can diced tomatos
1 can tomato paste
2 Pks McOrmic Chili Seasoning
3/4 cup of home made molasses (prefered, if no molasses then 1/2 box of brown sugar.

Bubba’s Chili
1 lb each - hamburger/pork chops/sausage
2 tbs – peanut oil
4 – onions
1 – bell peppers
3 – garlic cloves
4 tbs/per pound meat – chili powder
2 – bay leafs, whole
1 tbs – cumin seeds
4 tbs – Worcestershire sauce
2 tbs – salt
2 tbs – pepper
4 tbs – brown sugar
1 - 15 oz can each – chili/pinto/red kidney beans
2 – 15 oz cans diced tomatoes
2 – 15 oz cans rotel tomatoes
2 cups – beef broth or water as needed
Cut up pork chops and sausage into bite size chunks and brown with hamburger meat in oil. Drain and add remaining ingredients. Simmer over low/medium heat for 2 hours or 6 hours in crock pot.
