Mallard breast w/ white specks all in the meat?

One of the male mallards that we got last weekend had white specks all in the breast. They were about the size of a pencil lead and 1/8 inch long and through out the breast. We didn't keep the breast and I didn't think a the time to get a picture of it.

I think that this has come up on here before. Does anyone know what this is?

It's called "rice breast"......I think.

Yep Rice Breast. Its common and Im not going to knowingly eat it..

Here is a little literature of some info on Sarcocystis in Humans(RiceBreast)

"after eating sarcocysts in animal muscles (meat), they become infected with stages that develop in the gastrointestinal tract. Humans can serve as both intermediate and definitive hosts for different species of Sarcocystis. Detection methods, means of identification, prevalence of infection, transmission routes, clinical signs, diagnostics, and methods of treatment and prevention are described in this chapter."

Nope this topic has never come up before.

And I have never said if you kill it you should eat it especially since there have been NUMEROUS studies done that they don't effect the taste of the duck or your safety by eating it. IMO you kill it you eat it, at least that's the rule at my home and camp. Of course I have never said that before either.

I pick the white parts out and serve them on the side. Cuts down on the amount of rice I have to cook. A poor man gotta cut corners where he can!

We killed a mallard this weekend with "rice breast" as well. Needless to say, we didnt eat it, I dont care what "they" say is safe to eat or not. Who the hell is "they" anyway, haha :lol:

+1000 I ain't seen "they" eat one, so I'm not gonna willingly and knowlingly eat a duck full of parasites that live on muscle tissue and eat it to the point where the bird becomes too week to fly and eat. I know, cooking it is supposed to kill it, but I ain't gonna do it.
