we have over 300 acres planted mainly with sorghum. we did not leave areas open for landing zones. is it legal to open areas in the sorghum prior to seed head formation? this is my first year with sorghum, what will it do when flooded? will it fall on its own or remain standing in 1-2 ft of water?

Yes, make a hole prior to seed head. I sprayed roundup on rice last year before it headed out. Didn't kill it but it didn't head out. I was trying to kill it so it would lay down and I'd have a nice open area. The rest of the field headed out and a thunderstorm flattened the entire field except what I had sprayed. That headless rice wasn't top heavy and stood all winter long. Exactly the opposite effect of what I had planned. 
All of the sorghum I've seen remained standing. The ducks will get it. Blackbirds will knock a lot off. Whatever you do, don't ride it down after it heads to make a hole or else you can't legally hunt it for ten days after all that seed is gone.
